Amazing Bran Muffins!!! #HealthyFood

Okay hi! I love food, and I bet that a lot of you guys do to, so today I thought I would share a semi healthy muffin recipe, with cinnamon, wheat bran and raisins. These where the ones my mom used to make for me when I did a whole day at the royal ballet, once a year. Now she makes them when my brother and I compete at tournaments. They taste amazing and they give you enough energy so that you can sit and wait for hours. This is the recipe you just have to have! It can be a rustic breakfast with both slow and fast carbs that lasts throughout the morning — the muffins are also excellent for snack time.



3 dl flour
3/4 dl wholemeal flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 1/4 ground cinnamon
200g unsalted butter
1 1/2 cups brown sugar
2 eggs
3 1/2 cups sour milk
3 1/2 dl wheat bran
3/4 cup raisins


Turn on the oven at 190 degrees Celsius.
Mix the flour, wholemeal flour, baking powder, baking soda, salt and cinnamon in a large bowl and set it aside for later.
Beat the butter a few minutes in a large bowl and stir then the brown sugar in.
Beat another minute and add the eggs.
Beat vigorously and then add the sour milk and half of the flour mixture.
Beat another minute and add the remaining flour mixture.
Finally, stir in the wheat bran and the raisins.
Grease your muffin tins and fill in the dough, almost up to the edge.
Bake them approximately 25-30 min, if it is large muffins or shorter if they are small. Check by inserting a toothpick into the center. The muffins are ready if it's clean.

Serve them warm with butter or jam. The muffins are also great on their own, and cold. They can also be frozen for later use.
